The Jordan Heritage Restaurant, is a non-profit organization established in 2014. Its mission is for Jordanian heritage to be documented, revived, and experienced by all locals and international visitors; thus, using heritage as a vehicle of pluralism, women’s rights, social cohesion, commercial sustainability and inter-cultural exchange. It all started when tracing the “Mansaf” – Lamb with Yogurt in the remote villages back from the Great Arab Revolt, and as a response the local Jordanian villagers would make all sorts of unheard dishes; the number of dishes reached 25, Jordan Heritage decided to document the Jordanian cuisine.
