Playa del Carmen
Most visitors come to Playa del Carmen chasing turquoise water, beach clubs and frozen margaritas. Just a few streets back, however, another side of the city comes into focus. Tortillas slap against hot griddles, charcoal crackles beneath hanging cuts of meat, and family recipes from every corner of Mexico find a new home. Unlike ancient culinary capitals such as Oaxaca or Puebla, Playa's food story is still being written, shaped by generations of migrants who brought the flavors of their hometowns to the Caribbean coast.
Before we get started, the tour reflects the local cuisine and the limitations of traditional eateries mean we unfortunately cannot cater for every dietary restriction. Here's an honest appraisal so nobody is disappointed:

The culinary road trip across Mexico begins without ever leaving Playa del Carmen. The Yucatán Peninsula takes centre stage with tacos de cochinita pibil, where pork marinated in achiote and bitter orange is wrapped in banana leaves before being slow-roasted until meltingly tender. Beside it comes lomitos de Valladolid, a dish that reflects centuries of exchange between Maya traditions and Spanish influences, proving that some of Mexico's greatest recipes were born from two worlds colliding. As we stroll between stops, we'll learn about one of the most extraordinary figures in Mexican history. Shipwrecked Spaniard Gonzalo Guerrero abandoned the conquistadors, embraced Maya life and fought alongside his adopted people, earning a place in history as the father of mestizo Mexico, and gave the district its name.

We'll tuck into quesabirria, the Jalisco sensation that's become one of Mexico's most celebrated street foods, with crisp tortillas, molten cheese and richly braised beef begging to be dipped into its deeply flavored broth. Along the way, fluffy tamales wrapped around vibrant green salsa, golden shrimp empanadas and smoky steamed chorizo tacos showcase just how many regional traditions now thrive in Playa's neighborhood kitchens. Each stop tells a different story, but together they reveal the extraordinary diversity of Mexican cooking.

A short local bus ride carries us beyond the tourist strip and into the everyday rhythm of Playa del Carmen. We'll cool down with one of Mexico's cleverest flavour combinations: chamoy sorbet, balancing sweet, sour, salty and spicy notes in a way that somehow makes perfect sense after the first spoonful.
Then comes one of the day's true highlights. Hidden inside a neighborhood institution that's part butcher's shop, part casual eatery, we'll discover cecina de Yecapixtla. Thin slices of lightly cured beef are grilled over glowing charcoal until smoky, savory and impossibly tender. Back in the town of Yecapixtla, entire festivals are devoted to this specialty, and after one bite, you'll understand exactly why.
