When I first started travelling, I really enjoyed the context provided by those old fashioned guidebooks, how the history of a country, a town a people were linked to what had happened there. I was stunned to realise that our food has been on a similar journey and I wanted to offer more than a class that teaches you how to play with melted chocolate, so here it is, a hands on entry into the world of chocolate making, from the tree to the bar and beyond. Oh this is all vegan, dark chocolate is vegan but it will taste like Christmas so milk chocolate fans, this will be a revelation.

On this experience you’ll learn the true story of how chocolate becomes the world’s favourite sweet.
We’re located on the edge of the Caribbean Sea in the Historic Port of Falmouth, a location normally accessible only to cruise ship passengers.
My family is from this area and has been growing cocoa for generations so I always give a brief history of the island and the historical use of chocolate.
I’ll tell you about how I went from a BBC Correspondent to a chocolate maker before I explain how we go from the raw ingredients to the finished yummy product.
We then get to know each other before we make our traditional Jamaican spiced chocolate but with a twist.
