This land has been famous for soba since ancient times. Nagano is a mountainous prefecture which doesn’t have many flat fields. Fortunately, soba is best suited for cultivation in high-and-cold regions. That’s why good quality soba has been cultivated on the slopes of the mountains in Nagano.
