You'll start with green, unroasted beans, barely recognisable as coffee. You'll follow the roasting, watch the colour shift and the workshop fill with the kind of smell that makes people stop talking for a second. The beans are then ground by hand and brewed slowly in a briki, buried in hot sand — the way it's been done in Greek homes for generations.
