In this laid-back, beginner-friendly class you will go from a pile of Russet potatoes and flour to a plate of pillowy homemade gnocchi tossed in a brown butter sauce with crispy sage, black pepper and a finish of Parmesan and fresh chives that makes the whole dish sing. Along the way you will learn how to work a gnocchi dough, shape it properly and nail the brown butter timing, that precise moment between golden and gone that makes all the difference.
