Traditional Moroccan cuisine is rightly considered one of the tastiest and finest in North Africa. We will meet in the old medina, place de l'Horloge, and will immediately go shopping in the markets of Essaouira. We will explore all the markets and buy the fresh ingredients from the locals to buy food. Later we will go home, I will receive you with Moroccan mint tea. After that we are getting ready to cook together, I will show you how to cook our couscous step by step and I will share with you all the recipes I learned from my grandmother. Finally, we appreciate our work, we will savor our preparations with a great Berber mint tea! I'll show you the secret of good! Welcome to Essaouira with another kind of experience different from regular cooking classes.

Go for a safari and spend an unforgettable afternoon and evening in the Agafay desert nicknamed the desert of Marrakech! Cross the desert in quad and contemplate the sunset on camelback. Admire the belly dancers and the Moroccan folklore and enjoy a delicious Moroccan dinner. Departure from your place of residence around 4:00 pm. (30mn drive) Arrived at the desert of agafay you begin by a ride in quad of a duration of 60mn. Follow by a 60mn camel ride. After the sunset you will sit around a campfire and enjoy the traditional atmosphere of southern Morocco. Traditional Moroccan dinner with the Menu: Assortment of Moroccan salads. Chicken or meat tagine. Vegetarian Couscous Seasonal fruits. Mint tea. Traditional musical atmosphere (belly dancer and Gnaoua music...). Aromatic hookah break (extra charge). Return to your place of residence around 23h00

This half-day excursion takes us to Sidi Mbark, a small Berber village 35 km south of Essaouira. We walk to a little cascade and close by visit the old Marabout (residence for the spirit of a Saint or wise man). Here, the convergence of a large sand dune, a small river, and an imposing rock splendidly frames a lovely bay. The stream brings some water (water level depends on season/rainfall) into this very dry region to irrigate local crops. The landscape offers a rich interplay of green, blue and yellow. As it rests on the rocks, the Marabout that gave its name to the village speaks of former times. Walking time is approx. 40 minutes to reach the cascade and 30 minutes back (round trip, plus time for several stops). If you have kids and you’re not sure if they will make the entire walk, get the donkey to take the strain! On the way back to Essaouira we will have tea or coffee at Sidi Kaouki, a relaxed surfers’ village, where we will enjoy a beautiful view over the large sandy beach. As we will be driving through the Argan zone, you have the option to visit an Argan oil cooperative and learn about the production of this beautiful oil - in all the world, a product unique to this area. They will offer us a taste of the lovely things they make with it, too. Very likely you will see the famous goats in the trees on this tour to the south of Essaouira.

The cooking class is offered in the beautiful Haha-region 35 km south of Essaouira. This is the land of the Berbers, Morocco’s indigenous population. The Berbers of the Haha hills cultivate crops and keep animals, mainly goats and sheep. We visit a local souk featuring freshly harvested fruit and vegetables, in addition to meat, eggs, honey – in short, all the staples for daily living, including the essential ingredients for our Berber cooking class. The class takes place at an ecological farm, centred around an authentic Berber kitchen stocked with traditional items for food preparation. Khadija and Khadija, two lovely local women, show you how they roast barley grains on the fire, and then grind them in a stone mill to produce the flour and semolina used as the basis for traditional flat bread and couscous. We bake flat bread in a clay oven and steam couscous in a traditional clay pot. We learn to make a traditional tagine of vegetables and goat meat with Moroccan spices and olive oil – oil derived from the olive trees growing on the farm. Depending on the weather, lunch is served outside if at all possible. Eating in beautiful, calm and natural surroundings is a special event. Following the meal, we enjoy tea infused with fresh herbs from the garden.
