At our first stop, you’ll step into a bustling local eatery tucked near the riverside, where the sounds of sizzling batter and smoky grilled pork fill the air. You’ll watch local chefs prepare bánh xèo (Vietnamese savory pancakes) right in front of you — golden and crispy, filled with shrimp, pork, and bean sprouts.
You’ll also get to taste juicy grilled pork skewers (thịt nướng) fresh off the grill, and wrap your own gỏi cuốn (fresh spring rolls) using rice paper, herbs, and vegetables. Don’t worry — I’ll guide you step-by-step!
It’s a fun, hands-on food experience where you’ll eat like a local and learn how these dishes reflect Vietnam’s balance of texture, flavor, and freshness.

At this stop, you’ll visit one of Hoi An’s most famous bánh mì shops — a place that has gained international attention. In fact, world-renowned chef Anthony Bourdain visited this very shop and called the bánh mì here a must-try!
As we arrive, you’ll see baguettes being toasted to golden perfection, the smell of fresh herbs and grilled meat filling the air. You’ll get to choose your own filling — whether it’s pork, chicken, egg, or even vegetarian — and watch the vendor skillfully assemble your sandwich with homemade pâté, pickled vegetables, chili, coriander, and sauces.
We’ll enjoy our bánh mì just like the locals do — on a small stool by the sidewalk — while I share fun stories about Vietnamese street food culture and how this simple sandwich became a world-famous dish.

Next, we’ll head to a cozy local restaurant known for serving one of Hoi An’s most beloved dishes — Cơm Gà, or chicken rice.
Here, you’ll enjoy tender shredded chicken served over fragrant rice that’s been cooked in chicken broth and turmeric. It comes with a mix of fresh herbs, pickled green papaya, and a light dipping sauce that brings all the flavors together. Every bite is flavorful, light, and refreshing — the perfect balance of texture and taste.
As you enjoy your plate, I’ll explain the history behind this dish, how it’s different from chicken rice in other parts of Asia, and why it’s such a local favorite here in Hoi An.

Now it’s time to discover one of Hoi An’s most unique and traditional dishes — Cao Lầu, a noodle dish you can only find in this region.
We’ll visit a small, family-owned noodle shop tucked away from the tourist crowds. Here, you’ll try Cao Lầu — made with chewy noodles, slices of barbecue pork, fresh herbs, crunchy rice crackers, and a small amount of broth. The noodles are special because they’re soaked in water from ancient Ba Le well and lye from wood ash, giving them a distinct texture and flavor.
While you eat, I’ll share the fascinating story of how this dish reflects the cultural blend of Hoi An — Chinese, Japanese, and Vietnamese influences all in one bowl.
Optional: Depending on your preferences, you may also try another regional noodle dish like Mì Quảng or Bún Thịt Nướng.
